Vegan MoFo 2013 | Mac & Cheese Stuffed Jalapeño Poppers



Jalapeño poppers are without a doubt the perfect snack food. To me, at least. So of course for Vegan MoFo I’m gonna stuff ’em with mac. This recipe is pretty easy, but I’d recommend using latex gloves to seed the jalapeños, otherwise you’ll have spicy fingers for eternity. The bigger the peppers, the better, because they can hold more mac and are usually milder. Also, a smaller pasta is necessary here. I used small shells, but elbow macaroni would work fine, too. Now on to the recipe..







Mac & Cheese Stuffed Jalapeño Poppers
  1. 10 Jalapeño peppers
  2. 1 cup of dry, small pasta
  3. 1 cup of raw, unsalted cashews (not soaked)
  4. 1 cup + 1 tbsp nondairy milk
  5. 1/3 cup of nutritional yeast
  6. 1 tsp powdered mustard
  7. 2 tsp garlic powder
  8. 1 tsp salt
  9. 1/2 tsp fresh ground pepper
  10. 1/2 tsp turmeric
  11. 1/4 cup panko breadcrumbs
  12. 1 tbsp Earth Balance or canola oil
For the jalapeños
  1. Wash and dry the peppers, slicing the top part off each pepper (you do NOT want to cut them in half) and scooping out the seeds and white ribs with a spoon. Set aside while you make your mac!
For the mac
  1. Combine cashews, milk, nutritional yeast and spices in a blender and blend until smooth. Cook pasta until almost al dente. Drain and toss with sauce in the same pot you cooked the pasta in, allowing the sauce to thicken some.
Assemble the poppers
  1. Stuff a few spoonfuls of mac into each pepper, so that they overflow a little. Mix together breadcrumbs and melted Earth Balance or oil and sprinkle mixture onto each mac-stuffed pepper. Top with a sprinkle of paprika (optional).
  2. Set poppers on a aluminum-foil lined baking sheet coated in nonstick spray. It's tricky to keep the poppers from tipping over, and I found that positioning them close together so that they're supporting each other helps keep them upright. Spray some nonstick spray on top of the poppers and bake at 400 degrees F for 20-30 minutes, until the peppers are cooked and the breadcrumbs are browned.

    These look amazing! I found you on the Vegan MoFo page and I love the idea of your blog. Even though Guy is a little chachi, I do find a lot of the stuff he makes to be tempting (vegan style of course!).
