Vegan MoFo 2013 | Crock-pot Mac & Cheese

This is the laziest, junk food-iest mac & cheese I’ve ever made, and it’s awesome. If you like  cheese substitutes, that is. I can’t really envision this working without a cheese substitute, unless perhaps you used a very thick cashew cream.  I cooked mine for a little longer than I should have, so it was super mushy. But somehow that worked out. The best part about this recipe? You don’t even have to boil the pasta! 

Crock-pot Mac & Cheese
Ingredients
  1. 1/2 a 1lb. box of dried pasta (I used small shells)
  2. 4 cups of non-dairy milk (I used almond-coconut milk)
  3. 2 cups of cheese substitute (I used almost an entire block of Follow Your Heart cheddar)
  4. 1/3 cup nutritional yeast
  5. 1 tsp turmeric
  6. 1 tsp paprika
  7. 2 tsp garlic powder
  8. 1 tsp onion powder
  9. 1 1/2 tsp salt
  10. 1/2 tsp cracked black pepper
Instructions
  1. Combine all ingredients in a crock-pot and cook on low for 2 - 2 1/2 hours, stopping at 1 hour to stir the mixture. Cooking times may vary depending on your brand of pot, so keep an eye on it!

    If I wanted to make twice the amount, how much extra almond/coconut milk would I use? 8 cups seems excessive…

      Hey Nikole, I know 8 cups seems like a lot but the pasta cooks in the liquid so you need a lot. If you want to try 6-7 cups and then add more if necessary 30 mins before it’s done that could work.

    OMG. I just made this. It is seriously addictive! I doubled (almost) the recipe to use 1 full lb box of rice pasta, only 1.5 bags of Daiya shredded cheddar, added some cayenne for a kick, and it was awesome. Thank you for posting this recipe bc I love mac n cheese, am vegan (newly–about a year now), and was making it on the stove every time. This is a no brainer recipe that comes out great!
